Tasty Chicken Lollipops

Serves 4

 

 

12 chicken wings, cut off one bone and collect all the flesh at one end

1 egg – slightly beaten

100g corn flour

3 cloves garlic, chopped to a paste

2 tsp ground ginger

250g breadcrumbs

Oil for deep-frying

Salt & Pepper to season

 

Prepare three separate bowls, in the first the beaten eggs, in the second bowl mix the cornflour with the garlic and ground ginger and in a third bowl the breadcrumbs with salt and pepper.

 

Then dip the chicken lollipop in the cornflour mix and toss to lightly coat the meat, then transfer to the egg mixture and to finish coat in the breadcrumb.

Keep aside until needed.

 

Preheat the oil to 180˚C and deep-fry the chicken pieces for 4 -5 minutes until cooked through.

Drain on paper towels to remove excess oil.

 

Serve hot with a nice chilli jam.
