Scallop Forrest with Lime Mayonnaise

 This makes a wonderful starter for a Dinner Party but feel free to enjoy at anytime!

Serves 4

 

12 fresh scallops, coral removed

 

100g seasoned plain flour (with salt and pepper)

Salt and pepper

200ml Soda water

350ml Lager (Harp/Budweiser)

100g Cornflour

300g plain flour

 

250g Mayonnaise

3 Limes, zest & juice

1 tbsp Fresh snipped Chives

 

To make the lime mayonnaise, place the mayonnaise in a bowl and add the lime juice and zest, combine well and refrigerate until required.

 

In a large bowl sieve in the flour, cornflour, salt & pepper.   Pour in the lager and soda water and whisk until a smooth batter is achieved.   Allow to rest at room temperature for approximately half an hour.

 

Preheat a deep fat fryer to 180¬įc

 

Dredge the scallops in flour to coat, shake off excess flour

Dip the scallops in the batter, shake to remove excess batter

Carefully place the scallops in the hot oil

Cook for about 4 to 5 minutes until golden, remove from the oil and place on kitchen paper to drain, season with salt and pepper. Serve immediately with Lime mayonnaise
