Mushroom stuffed Fillet of Chicken

Serves 4

Chicken and mushroom, this easy to make dish is quick and easy!

4 Chicken Fillets (approx 175g each)
2 tsp olive oil
150g button mushrooms, finely chopped
1 clove garlic, crushed
50g Wholemeal Breadcrumbs
50g fresh basil
10 ml Water
Seasoning

Preheat the oven to 180C, line a roasting tray with baking paper.

Place the fillets on a chopping board and using a sharp knife butterfly the fillets, gently make vertical cuts halfway through the thick part of each fillet spreading the flesh to create an even thickness all over.

In the meantime, heat the olive oil in a frying pan and add the mushrooms and garlic and cook for 2 – 3 minutes. Add the breadcrumbs and cook for a further minute before adding the water and basil. Cook for a further 2 minutes and remove from the heat, allow to cool.

To stuff the chicken, lay the prepared filled on the baking tray and spread 1 spoonful of the stuffing lengthways along each fillet, close over the secure with a cocktail stick. Place in a preheated oven for 30 – 35 minutes until cooked through and golden.

Served with steamed potatoes and broccoli.
