Clarified Butter
Clarified butter is just the oily part of butter, without the buttermilk.
You can buy it ready prepared in ethnic stores under the name ghee. If you have a microwave, put the butter in a plastic jug and microwave on a high heat for 1 minute. If it is not completely melted, give it another 30 seconds. Do not allow it to boil. Continue as described below, discarding the watery buttermilk.
Ingredients
- Makes about 200 ml/7 fl oz
- time: N/A
- oven temp: N/A°C / N/A°F
-
250 g/9 oz packet butter
Clarified Butter
Melt the butter in a small pan over a low heat. Leave to stand for a few minutes until all the oil rises to the top, then skim off the oil into a sealable plastic container. It will keep for two months in the fridge.
