Chocolate Curles
These chocolate curls can be sprinkled over almost any chocolate dessert for a delicate finishing touch. There are two main things to remember when melting chocolate are to melt it slowly and never let it get too hot.
Ingredients
- Makes 8-12 chocolate curls

- 100 g/4 oz plain chocolate (at least 50% cocoa solids)
Chocolate Curles
Place the chocolate in a heatproof bowl set over a pan of simmering water and heat gently until the chocolate has melted. Remove from the heat and stir until the chocolate is smooth and glossy.
Pour the chocolate on to a marble slab and allow to set at room temperature. If you put it in the fridge the chocolate will loose its wonderful sheen. Using a large sharp knife, pare long curls off the surface of the hardened chocolate, carefully adjusting the angle of the knife as you work. Use as required.
