Tomato Chutney

Ingredients

  • 2kg Peel and chopped ripe tomatoes
  • 1½ Peel and chopped tart apples
  • 500ml chopped onion
  • 1 Seeded and chopped green pepper
  • 500ml raisins
  • 750ml brown sugar - packed
  • 15ml table salt
  • 5ml ground ginger
  • 750ml cider vinegar
  • 4 slices caramelised Dunbrody onion crostini (page 00)
  • salt and freshly ground black pepper

Ballystraw mussels

Put all ingredients into large pot and bring to boil uncovered over medium heat, stirring often until sugar dissolves or until the fruit is tender Boil, uncovered, for about 45 minutes or until fruit is tender. Reserve.
