Pear Chutney
Ingredients

- 60g Peeled and chopped cooking apple
- ½ tbsp salt
- 130g Peeled, deseeded and chopped very ripe tomatoes
- 60g finely chopped onion
- 60g sultanas
- 150g caster sugar
- 15g finely chopped fresh ginger
- 150ml white wine vinegar
- 380g Peeled, cored and cut into pears
Pear Chutney
Combine all the ingredients except the pears in a thick-bottomed saucepan and bring to the boil over very low heat, stirring from time to time with a wooden spoon. Continue to cook for about 1 hour, giving a stir every 10 minutes, until the mixture is jam-like and syrupy. Add the pears and cook very gently for another 40 minutes, stirring every 10 minutes. Leave to cool completely. Keep in the fridge until needed (it will keep for several weeks).
